Mr. Chase, as the Executive Chef and proprietor,
translates the winning elements of his success as a chef
for some of the most discerning restaurateurs in New England.
He oversees the entire operation, being responsible for
the kitchen, menu, food preparation and presentation,
personnel, and overall success of the restaurant.
Mr. Chase’s most recent culinary experience
was serving as Sous-Chef at Spring Valley Country Club
in Sharon, Massachusetts, a private and exclusive club
that boasts membership of the rich and famous. Prior to
joining Spring Valley, he gained further prominence as
Club Chef at Gillette Stadium, that also included serving
the World Champion Patriots. Further culinary experiences
included being Sous-Chef at the Weston in Waltham and
as assistant kitchen manager at Houston’s in Hackensack,
NJ. Mr. Chase received an Associates Degree in Culinary
Art and a Bachelor Degree in Food Service Management from
the renowned Johnson & Wales. Through his education
and experiences, and his research into global food trends,
he has attained his unique style and approach to cooking
that guarantees the menu at Castellana’s is one
of the best in New England…Ensuring a true elite

The menu offers an eclectic blend of rustic
Italian and Mediterranean selections that include the
best grades of meat, freshest seafood, and fresh farmed
